Peter Kolavo is the Research and Development Chef for South Chicago Packing LLC, a large-scale premium manufacturer of animal fats, oils and shortenings. SCP is part of the Miniat constellation of companies, now in its fifth generation of family owners and operators. Chef Pete graduated from Kendall Culinary and assumed this current role for the last 8 years where his insights, activities and efforts have helped to transform the business and revitalize the brand, which is now available coast to coast and features in some of the finest foods such as pie crusts, fried chicken, French fries, donuts and more! Besides cooking, Chef Pete is kept busy by his two young sons his wife, who are avid gardeners in Indiana.
