John Iannucci is a seasoned restaurant industry veteran with over 25 years of experience, spanning both full-service corporate chains and top independent restaurant groups. His extensive leadership background includes roles at renowned brands such as TGI Friday’s, The Cheesecake Factory, Logan’s Roadhouse, BJ’s Restaurants, Anthony’s Coal Fired Pizza, Coco’s, and Shari’s. Additionally, he has worked with acclaimed independent chains including Carmine’s, Virgil’s Real BBQ, and Founding Farmers.
Currently, John serves as the Chief Executive Officer of Agave and Stone Hospitality, the parent company of Escalante’s Fine Tex Mex & Tequila and Fat Rosie’s Taco and Tequila Bar. Under his leadership, he is focused on scaling these brands, optimizing operational efficiencies, strengthening leadership teams, and driving both top-line and bottom-line growth.
With over a decade in executive leadership, John is passionate about the restaurant industry and is dedicated to mentoring the next generation of leaders. He holds a degree in Food & Beverage Management from Cornell University and is actively involved in advocacy for the restaurant sector. He serves as Chairman for the Nevada Restaurant Association, is a Hill Runner representing Nevada for the National Restaurant Association, and is a member of the advisory council for the Restaurant Leadership Conference.
John is excited to lead Agave and Stone in its next chapter, continuing the legacy of Escalante’s, a brand with over 30 years of history, and Fat Rosie’s, which has been delighting customers for more than 8 years. His enthusiasm for these brands is infectious, and he looks forward to showcasing their fun and vibrant experiences to a wider audience.
