Profile

Salvatore Capek is a co-founder of Fat Sal's and currently serves as COO and Vice President of the entities that own and manage the Fat Sal's restaurants. Since its founding in Westwood in 2010, Fat Sal's has grown into a Southern California staple with multiple locations across the region, as well as a presence in Las Vegas. Sal's responsibilities include maintaining and growing the Fat Sal's brand, developing building and construction standards for future buildouts, overseeing operations and productivity, and establishing and implementing standard operating procedures.

Before co-founding Fat Sal's, Sal put his degree in engineering systems design to work as a managing member and vice president of entities involved in the design, development, and maintenance of high-value properties across the United States and Europe. He graduated from the United States Merchant Marine Academy, where he was elected captain of his football team. After college, Sal served in the United States Naval Reserves for ten years and was honorably discharged at the rank of lieutenant.

Sal brings over a decade of hands-on experience scaling multi-unit restaurant operations, from brand development and construction standards to day-to-day operational excellence. He will join us to share firsthand stories and lessons from building Fat Sal's from a single Westwood storefront into a beloved multi-location brand.
