Creamy Gingered Sweet Potatoes

Creamy Gingered Sweet Potatoes are my favorite holiday recipe to keep things healthy during the season! Gingered sweet potatoes are made from whole ingredients readily available while being really easy to make. Simple lifestyle changes can keep us feeling great while celebrating the holidays.


INGREDIENTS
4 ea medium sweet potatoes, peeled and rough chopped
1½-inch fresh ginger root, peeled and chopped
½ cup coconut milk
3 T maple syrup
1 T coconut oil
Freshly grated nutmeg to taste
Sea salt to taste
½ cup pecans, toasted
METHOD
1. Peel and rough chop sweet potatoes. Add water cover with a pinch of salt and bring to a boil. Cook for about 10 minutes or until fork tender. Drain sweet potatoes.
2. In food processor, pulse fresh peeled ginger until minced. Add cooked sweet potatoes, coconut milk, maple syrup, coconut oil, nutmeg, and sea salt. Gently pulse sweet potatoes in food processor until smooth. Top with toasted pecans to serve.
ALTERNATIVE
Hand-mash sweet potatoes. Add cinnamon if desired.
