Fresh Sweet Potato and Orange Casserole

This recipe is a classic staple at our Thanksgiving meal. My aunt "bequeathed" this recipe to me! The delicious mixture of sweet potatoes, apples, and cinnamon with a wisp of orange flavor are the perfect blend for this autumn holiday, Thanksgiving, which we have so much to be thankful for!

INGREDIENTS

2 lbs sweet potatoes (4 cups mashed)

½ cup sugar

3 T butter or margarine

1 tsp salt

½ cup orange juice, freshly squeezed

1 tsp grated orange with rind

½ tsp grated lemon rind

1-2 ea sliced apples

Cinnamon

METHOD

1. Preheat oven to 350°F.

2. Grease one-quart casserole.

3. Cook potatoes whole until tender.

4. Peel and mash potatoes while hot.

5. Add sugar, butter, salt, orange juice with rind, and lemon rind.

6. Beat until fluffy.

7. Turn into greased casserole: Layer sweet potato mixture, sliced apples, and cinnamon 2 or 3 times, ending with sweet potato mixture on top. Lightly sprinkle with cinnamon.

8. Bake uncovered for 30 minutes or until lightly browned.
