Peanut Butter Oatmeal Bars

This bar will literally almost break a tooth if you eat it straight out of the freezer from its hiding place, but that’s the way I like them the most. I’ve been eating them for over 50 years now and nothing can tear me away from my mom’s PBO bars.

INGREDIENTS

1 14-oz can sweetened condensed milk

⅓ cup creamy peanut butter

1 cup flour

2 cups quick cooking oatmeal

1 cup firmly packed brown sugar

½ tsp baking soda

½ tsp salt

¾ cup softened salted butter

1 cup semi-sweet chocolate chips

METHOD

1. Preheat oven to 350º F.

2. Grease a 9x13” pan.

3. Combine milk and peanut butter; mix until blended, set aside.

4. In a large bowl, combine flour, oatmeal, brown sugar, soda, salt, and butter. Mix until crumbly.

5. Press half of crumb mixture into prepared pan.

6. Pour peanut butter mixture over crumbs in rows—the mixture will spread out to cover evenly. Sprinkle with chocolate chips.

7. Top with the rest of the crumbs and pat down.

8. Bake 25 minutes, cool.
