Spinach and Banana Smoothie
David Egan
The holiday season can be a challenging time to eat and drink healthy. Starting your day with this smoothie is an easy, healthy way to take care of yourself during the holidays! This is my daily breakfast smoothie! I pair it with crunchy peanut butter on whole wheat bread or a rice cake, and an avocado. It’s quick, easy, nutritious, and tasty! (The spinach adds a lot of color and nutrition, but a minimal amount of flavor.)

YIELD
20 oz
INGREDIENTS
2 cups spinach
1 ea banana, fresh or frozen
½ cup strawberries, fresh or frozen
½ cup blueberries, fresh or frozen1 cup soy or almond milk
Tip: If I’m using frozen strawberries and blueberries, I microwave them for 30 seconds first to get the consistency I like. If the bananas are also frozen, I increase the microwave time to 1 minute. I use a high-powered blender, so the spinach and frozen fruit don't require any cutting down or chopping.
VARIATIONS
1 cup frozen strawberries
½ cup blueberries
½ cup raspberries
Optional: Feeling decadent? Use chocolate soy or chocolate almond milk! (Omit spinach)
