Simo Ellilä is the CEO and Co-founder of Enifer, a Finland-based alternative protein start-up using a proprietary fermentation process to upcycle industrial side streams into nutritious mycoprotein ingredients. Prior to founding Enifer together with colleagues in 2020, Simo spent more than 10 years at the VTT Technical Research Centre of Finland, where he oversaw technology development on several biofuels and biochemicals processes. (A biochemist by training, Simo has a keen understanding of side stream raw materials, biorefining, fermentation and process economics.) ((He is a strong believer in the power of modern biotechnology to solve many of the problems in our current global food system, which he has learned to know through time spent living in Latin America, Asia and Europe.
