Profile
Prof. Kamal-Eldin received her B.Sc. and M.Sc. degrees from the University of Khartoum, Sudan in 1986 and 1990, respectively. She received her PhD from the Swedish University of Agricultural Sciences (SLU) in Uppsala, Sweden in 1993. She worked as a researcher, associate professor at SLU between 1994 and 2010 and then moved to the Department of Fiood Science, United Arab Emirates University (UAEU) as professor and Department chair. Having expertise is in food chemistry and analysis (Publications # 261, Citations 19189, H-index 74), prof. Afaf is leading the Food Composition, Structure, and Properties at UAEU. Currently, she is supervising one postdoctoral fellows, two PhD students, and 3 MSc students doing their research on different aspects of camel milk including chemistry, fermentation, and antidiabetic effect. We have published a number of articles on camel milk analysis and quality parameters. Our lab is equipped with chromatographic and spectroscopic equipment that can be used in this research. Prof. Afaf is collaborating with a number of international universities and institutes in this research.
